Broccoli and apples are filled with nutrients and high in fiber. Combined, they make a delicious salad that is also low in fat and sodium. For the freshest flavor, make and serve this salad on the same day.

Serves: 4

Ingredients 

  • 1 large crown of broccoli, cut into small pieces
  • 2 apples, cored and sliced
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

  1. Combine prepared broccoli and apples in a large bowl.
  2. In a smaller bowl, mix lemon juice, olive oil, salt, and pepper.
  3. Pour dressing over broccoli and apples. Mix well.
  4. Store in a covered container in the refrigerator until time to serve.
