Recipe: Chicken Parmesan

This crispy Italian dish pairs well with spaghetti squash, salad and bread.

This recipe has layers of flavors and uses ingredients you probably already have in your refrigerator and pantry. 

Serves: 6

Ingredients 

Chicken:

  • 6 boneless chicken breasts
  • 2 large eggs
  • 1 tablespoon garlic, minced
  • 2 tablespoons parsley, chopped
  • 2 cups breadcrumbs
  • 1 tablespoon garlic powder
  • 1 cup fresh Parmesan, grated
  • Salt and pepper
  • 1/2 cup olive oil for frying

For the Sauce:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 teaspoons garlic, minced
  • 1 teaspoon dried Italian herb
  • 14 ounces store-bought tomato marinara or pasta sauce (low sodium)

For the topping:

  • 8 ounces mozzarella cheese sliced or shredded
  • 1/2 cup fresh shredded Parmesan cheese
  • 2 tablespoons fresh chopped basil or parsley

Directions

  1. Preheat oven to 425°F. Lightly grease a baking tray (or baking dish) with non-stick cooking oil spray.
  2. Whisk together eggs, garlic, parsley, salt and pepper in a shallow dish. Add chicken into the egg, rotating to evenly coat each fillet in the mixture. Cover with plastic wrap and allow to marinate for 15 minutes.
  3. While chicken marinates, mix breadcrumbs, Parmesan cheese and garlic powder together in a separate shallow bowl. Dip the marinated chicken into the breadcrumb mixture to evenly coat.
  4. Heat oil in a large skillet over medium-high heat until hot. Fry chicken until golden and crispy, about 4-5 minutes each side.
  5. Place chicken on prepared baking tray or dish and top each breast with about 1/3 cup of sauce. Top each chicken breast with 2-3 slices of mozzarella cheese and about 2 tablespoons Parmesan cheese. Sprinkle with basil or parsley.
  6. Bake for 15-20 minutes, or until cheese is bubbling and melted, and the chicken is completely cooked through to at least 165 degrees internal temperature.
